Job Description


The Executive Sous Chef supports the Executive Chef in overseeing all kitchen operations at Jean’s NoHo. This role combines hands-on cooking excellence with leadership, organization, and consistency. The Executive Sous Chef ensures food quality, kitchen efficiency, staff development, and adherence to Jean’s culinary standards and brand vision.

Key Responsibilities Culinary Execution & Quality
  • Execute and uphold Jean’s menu with precision, consistency, and creativity

  • Ensure all dishes meet established standards for taste, presentation, and timing

  • Lead service on the line as needed, including expediting during peak periods

  • Oversee prep, production, and station setup to ensure smooth daily operations

Kitchen Leadership & Team Management
  • Supervise, mentor, and train sous chefs, line cooks, and prep staff

  • Foster a professional, disciplined, and positive kitchen culture

  • Assist with hiring, onboarding, scheduling, and performance evaluations

  • Enforce kitchen policies, safety standards, and cleanliness

Operations & Administration
  • Assist in managing food costs, labor costs, and inventory control

  • Monitor ordering, receiving, storage, and waste reduction

  • Ensure compliance with NYC Department of Health regulations and food safety standards

  • Maintain equipment functionality and coordinate repairs when necessary

Menu Development & Collaboration
  • Collaborate with the Executive Chef on menu development and seasonal updates

  • Contribute ideas for specials, tastings, and new dishes

  • Assist with recipe testing, documentation, and staff training on new menu items

Qualifications
  • 5+ years of experience in professional kitchens, including senior sous chef or equivalent role

  • Experience in high-volume, quality-driven restaurants (NYC preferred)

  • Strong leadership, communication, and organizational skills

  • Deep understanding of modern American or Mediterranean-influenced cuisine (as applicable to Jean’s)

  • Proven ability to lead services calmly and effectively under pressure

  • Knowledge of food safety, sanitation, and cost control
